In the Set Values - Multiple Columns dialog, enter 0 for the To value for column, then Set Values will scan and apply the formula to the last column.

For example, a workbook with 3 columns, the last column is column C. First set values on column B to column C with input 0 for To, then add a new column, set value will automatically apply the formula to the newly added column.
